COTE Korean Steakhouse coming to Venetian in Las Vegas

Gracious Hospitality Management’s Michelin-starred restaurant brand, COTE Korean Steakhouse, is heading to Las Vegas.

The acclaimed restaurant, with existing locations in New York, Miami and Singapore, will make its West Coast debut in 2025 at the Venetian, as part of a $1.5 billion reinvestment project by the resort, according to a Tuesday new release.

“I went to UNLV and my first formative job in the world of hospitality was in Las Vegas so opening a COTE in this entertainment epicenter is more than just any traditional opening — it's a triumphant homecoming," Simon Kim, founder and CEO of Gracious Hospitality Management, said in a statement. "While COTE Korean Steakhouse is a concept I created in NYC, the pulsating energy, music and entertainment of Las Vegas has always been intertwined in our brand's DNA, and we're taking that to the next level with this opening.”

COTE Las Vegas, “infused with the opulence and grandeur of Sin City,” will have unique, new and immersive dining experiences, while also drawing inspiration from its counterparts elsewhere, the release said.

It will marry certain aspects of Korean BBQ and a classic American steakhouse, with a menu that offers guests the opportunity of a “Butcher’s Feast,” or the chance to experience four cuts of the restaurant’s highest quality cuts of beef, various, Korean-inspired dishes and more.

The restaurant will also carry the COTE brand’s James Beard-nominated wine program, with an extensive wine list and suite of cocktails, per the release.

The space will be designed by David Rockwell and Rockwell Group, with a tiered dining area inspired by a theater, skybox private dining rooms, a central bar, immersive lighting and a DJ booth. It will be defined by dramatic lighting, a dry aging room and in-table smokeless grills — all through a “glamorous Las Vegas lens.”

“I'm honored to collaborate with The Venetian Resort on our first West Coast location and thrilled to be partnering again with David Rockwell as we aspire to create the most iconic Las Vegas restaurant the city has ever seen,” Kim said in the release. “We're taking our endless emphasis and focus on excellence in gastronomy and hospitality and amplifying the entertainment angle to the fullest extent to create something the city can be proud of, and I can't wait to bring it to life."

The Las Vegas iteration of COTE will be located in the Waterfall Atrium at the Venetian.
